Cooking spaghetti with clams is very easy, nevertheless is necessary to respect these simple steps to obtain a perfect result of this dish. |
Ingredients: (4 persons)
- spaghetti gr 400
- 1 Kg of clams
- garlic
- red pepper
- olive oil
- dry white wine good quality
- parsley
Preparation:
First Step: put the clams in a big bowl with salted water to be left for some hours changhing often the water.Rinse, drain e put the clams in a large pan and switch on the fire. You can observe as some clams will start to open.
Second Step: take off the clams from the pan and put them in a container with its same water.
Wash and dry the pan and fry lightly a segment of garlic with five spoons of oil and a small red pepper.
Third Step: when the garlic will be gold take it off slow down the fire and put the clams inside the pan.
Fourth Step: when the clams begin to fry add white wine and during the evaporation put to boil some salted water in another pot
Fifth Step: at this point fiilter the water of the clams that was left in the bowl and drop this liquid inside the pan..
Leave for two minutes and than switch off.
Sixth Step : in the meantime cook and drain the spaghetti and then drop them in the pan. Put on the fire for one minute than switch off and serve with fresh parsley if you wish.
